Deepali Celiac Story

Hi, this is Deepali, based in Atlanta. I was diagnosed with gluten intolerance in the year 2020 Jan. In the year September 2019, I started to have stomach pain, diarrhea, and frequent dizziness. My daily life was getting hampered, and on multiple occasions, I fainted. It was then I went to see the doctor who first examined me and got my blood work done, and the result was shocking: my iron level was 3, and b12 was extremely low too; I was immediately put on a high dosage of iron and b12 and advised me to see gastroenterologist, who further did blood work again followed by endoscopy which clearly shows I am celiac. Since then, I have been on a gluten-free diet; it was a struggle in the beginning. But when you finally understand that food is your medicine and you don’t have to pop some pills every day in your body, it becomes easy to accept yourself. I find eating out challenging, but I am sailing through it. After a few months of being diagnosed, I started a page on Instagram sharing awareness on celiac and healthy gluten-free recipes. I particularly explore and experiment on Indian recipes making gluten-free version.
